French Food : Creme brulee recipe

Enjoy French Food : Creme brulee recipe..


Ingredients : 
  • 4 egg yolks 
  • 300ml whipping / double cream 
  • vanilla pod 
  • 1 tablespoon caster sugar 
  • demarara sugar 

Method :

  • Heat the cream gently in a saucepan with the vanilla pod 
  • Whisk the egg yolks and caster sugar together, then slowly pour in the warm cream, stirring continuously 
  • Remove the vanilla pod and divide the mixture between the ramekins (little creme brulee dishes) Put the ramekins in a roasting tin, and pour water into the tin until it is 2/3 of the way up the edges of the ramekins. Make sure water does not splash into the ramekins. 
  •  Put in a preheated oven (160-170 degrees C) for 30 minutes 
  • Allow to cool (you can put them in a refrigerator to speed this up). They should be completely cold before the final stage. 
  • Sprinkle a thick layer (3mm) of demarara sugar on top of each one. Put them under a high grill, close to the heat, until the sugar has melted together. Watch attentively! If the sugar is melting unevenly turn them around. Should take less than 5 minutes. 
  • Or use a propane blowtorch if you have one to hand. 
  • The creme brulee should now have a 'crunchy' top. Eat within 30 minutes or the crust will start to go soft.

Italian Food : Baked Ham and Cheese Omelet Roll

Ingredients: 
  • 6 eggs 
  • 1 cup milk 
  • 1/2 cup all-purpose flour 
  • 1/2 teaspoon salt 
  • 1/4 teaspoon black pepper 
  • 1 cup cooked ham, chopped or 9 slices of any deli ham 
  • 1 cup shredded sharp cheddar cheese 

Directions: 

1 Preheat oven to 450 degrees. 
2 Beat eggs and milk until fluffy. 
3 Add flour, salt and pepper and beat or whisk until smooth. 
4 Pour into a buttered or greased 9 x 13 baking dish or pan. 
5 Bake for 10 - 15 minutes or until eggs are just about set (Keep an eye on them at the 6 minute mark -- depending on your oven, they could set that fast!). 
6 Sprinkle with chopped ham or lay slices of ham evenly on top. 
7 Sprinkle with cheese. 
8 Bake for about 5 minutes more or until cheese is melted. 
9 Starting at short side, roll up omelet while still in pan. 
10 Place seam side down on serving dish. 
11 Cut into slices.

Chirstmas cake : Christmas cupcakes recipe

Ingredients :

FOR THE CAKES   
  • 280g self-raising flour     
  • 175g golden caster sugar     
  • 175g unsalted butter , very soft     
  • 150g pot fat-free natural yogurt     
  • 1 tsp vanilla extract     
  • 3 eggs  

FOR THE FROSTING
  • 85g unsalted butter , softened     
  • 1 tsp vanilla extract     
  • 200g icing sugar , sifted  

TO DECORATE    
  • natural green food colouring (for Christmas trees), sweets, sprinkles and white chocolate stars     
  • milk and white chocolate buttons and natural colouring icing pens, available at Asda

 Method :   

  • Heat oven to 190C/170 fan/gas 5 and line a 12-hole muffin tin with cake cases. Put all the cake ingredients into a bowl and mix with a whisk until smooth. Spoon the mix into the cases, bake for 25 mins until golden and risen and a skewer comes out clean. Cool on a wire rack.     
  • For the frosting, beat the butter, vanilla extract and icing sugar until pale and creamy and completely combined. To make snowmen, reindeer and Christmas puddings, first spread the icing over the top of each cake. Then lay the chocolate buttons on top, slicing some buttons into quarters to make ears and hats. Finally, use icing pens for the details. For the Christmas tree, colour the icing with green food colouring and pipe onto the cakes using a star-shaped nozzle, decorate with sweets, sprinkles and white chocolate stars.

  • 1 tbsp melted and sieved apricot jam     
  • 200g marzipan     
  • 300g white ready-to-roll fondant icing     
  • gold or silver edible spray     
  • edible gold balls     
  • ribbon     
  • 1 8cm-wide mini Christmas cake ,                                                                    taken from the centre of the Christmas wreath cake (see 'goes well with')

 Method :     

  • Use apricot jam to glaze your mini cake. Cover using marzipan and 250g of the white ready-to-roll fondant icing.        
  • Roll out another 50g icing and cut out snowflakes or stars using cutters - you can spray them with gold or silver edible spray to make them look really dramatic. Stick them on top of the cake with a little runny icing, place an edible gold ball between the points and add the pretty ribbon.

  • 400g white sugar cubes     
  • 100g preserving sugar     
  • 3 tbsp edible pearly balls

 Method :     

  • Once the cake has been removed from the oven, increase the heat to 200C/180C fan/gas 6. Leave the cake in its tin. Put the sugar cubes in a large bowl and crush with the end of a rolling pin to a sugary rubble. Mix in the preserving sugar, pearly balls and egg white - it should have the texture of wet sand. Tip the mixture on top of the cake and level the surface. Bake the cake for 5 mins to set the sugary crust, then remove and leave to cool.     
  •  Once completely cooled, remove from the tin and peel off the baking parchment. Sprinkle the top with edible glitter, tie ribbons around the side and decorate with your favourite figurines, if you like.

TO COVER THE CAKE  
  • 20cm/8inch round fruitcake     
  • 3 tbsp apricot jam , 
  • warmed icing sugar , for dusting     
  • 750g natural-coloured marzipan     
  • 750g white ready-to-roll icing  

TO DECORATE
  • 500g white ready-to-roll icing     
  • green food colouring paste     
  • 200g icing sugar , plus extra for dusting     
  • 2 Christmas tree cutters , 
  • about 5cm and 10cm tall     
  • 1 egg white     edible sparkles , 
  • available from cookshops     
  • green Smarties and silver chocolate buttons (optional)

 Method :    
  • Cover the cake with marzipan and white icing. (See step 5 for more information).                                                                                                                                                                               
  • Knead the ready-to-roll icing, then split into three balls. Leave one ball white, and knead a little green colouring into the other two to give two different shades of green. Roll out each ball to about 5mm thick on a work surface lightly dusted with icing sugar. Stamp out about 15 tree shapes using tree cutters, then leave to dry for a few hours or overnight.       
  • Once firm, lift half of the trees onto a cooling rack. Combine the 200g icing sugar and egg white to make an icing, then drizzle it over the trees with a teaspoon. Scatter with edible sparkles and leave to dry again until solid.     
  • Put a little icing on the back of each tree and press the trees around the edge of the cake, overlapping some to give a 3-D effect. Scatter the sweets over the top of the cake to finish. Can be iced up to a week ahead.     
  • To cover a cake with marzipan, first brush the cake all over with a thin layer of warmed apricot jam. Dust the work surface with icing sugar, then roll out the marzipan evenly until you have a 5mm- 1cm thick round, about 40cm across for a 20cm cake. Lift over the cake, using a rolling pin to help, then smooth with your hands and trim off the excess. Leave to dry overnight or for a few hours. Lightly brush the marzipan all over with cooled, boiled water. Roll the icing out as you did the marzipan, then smooth with your hands, trim off the excess and leave to dry.

  • 50g butter     
  • 150g toasted flaked almonds     
  • 150g whole blanched almonds    
  • 50g plain flour     
  • icing sugar , to dust

 Method :  

  •  Bake the Apricot & almond fruitcake (see recipe to the right of this one) or any other 20-23cm fruitcake but bring out of the oven 10 mins before the end of the cooking time. Increase oven temperature to 200C/180C fan/gas 6. Gently heat the golden syrup and butter in a saucepan.                                                                                                          
  •  When it is all melted and runny, stir in toasted flaked almonds, whole blanched almonds and plain flour. Use a couple of teaspoons to dot the mixture all over the top of the cake, and pop back in the oven for 12-15 mins until the topping is nicely golden. Cool, then remove from the tin and cover the sides with pretty ribbons. Lightly dust the cake with icing sugar to finish.

Sweet and Sour Salmon Recipe

Salmon fish is a very tasty fish.It can be cooked in various ways..If you a sweet lover you can cook sweet and sour salmon..

Ingredients :

  • 1 salmon fillet (pound)
  • 1 onion (sliced)
  • 1 sweet pepper
  • 12 lb mushroom (sliced)
  • 2 tbsps butter
  • 20 ozs pineapple chunks
  • 12 cup sugar
  • 2 tbsps cornstarch
  • 12 tsp dry mustard
  • 12 cup white vinegar
  • 1 tbsp soy sauce
  • 14 12 ozs stewed tomatoes                                                                                                                  
Directions: 

  •  1 Pull bones out of salmon with pliers and cut into chunks, then poach in water. 
  • 2 Saute onion, pepper and mushrooms in butter until tender. 
  • 3 Add tomatoes and cooked salmon.
  • 4 Drain pineapple, reserve syrup. 
  • 5 Combine sugar, cornstarch and mustard. Stir in with the pineapple syrup, vinegar and soy sauce. Add to onion mixture. Cook, stirring constantly until thick and clear. If needed, may be thinned with water. 
  • 6 Add pineapple chunks. Serve over rice.

Ingredients :

  • 1 1/2  pounds  salmon steaks, about 3/4 inch thick
  • 2  tablespoons  all-purpose flour
  • 2  tablespoons  olive oil
  • 1/2  teaspoon  kosher salt
  • freshly ground black pepper
  • 1  14 1/2-ounce cans  diced tomatoes
  • 1  16-ounce can  small white navy beans (drained)
  • garlic cloves, minced
  • 2  tablespoons  chopped fresh tarragon

    Directions :

  • Dredge the fish in the flour. Meanwhile, heat the oil in a large skillet over medium heat until it shimmers. Add the fish and brown about 3 minutes on each side. Carefully lift the fish out of the skillet and set it aside on a platter; sprinkle with the salt and pepper. 
  • Add the tomatoes, beans, and garlic to the skillet and bring to a boil over high heat. Cook 3 minutes. Reduce heat to low and return the fish to the pan along with the tarragon. Cover and cook 5 minutes or until the fish flakes when tested with a fork or the tip of a knife

Wheatfree Cranberry & Orange Bread Recipe

Method:

  • Lightly grease a 900g/2lb loaf tin. Preheat oven to 200°C/400°F/Gas 6.
  • Empty contents of packet into a bowl, add the cranberries, orange rind, water and oil.
  • Mix well with a spoon to produce a batter.
  • Transfer to prepared tin. Smooth top with a wet spoon. Make a deep cut lengthwise along the centre.
  • Bake for about 35 minutes until golden brown.
  • Turn onto a wire tray and cool completely before slicing.

Christmas Ice Cream Recipe

Method :

  • Place dried fruit, rind and brandy in a bowl, leave to sit. Overnight if possible.
  • Place cream, milk, vanilla seeds, pod, cinnamon stick and mixed spice in a saucepan, bring just to a simmer, take off heat and leave to infuse.
  • Whisk yolks and sugar together until pale and creamy, strain infused mixture onto eggs, stirring to combine. Place mixture back into a clean saucepan and stir over a gentle heat until mixture coats the back of spoon. Leave to cool completely before placing in ice cream machine or container in freezer.
  • When ice cream is nearly frozen, add fruit mixture and continue to churn until frozen.

Chocolate Christmas Pudding Recipe

Ingredients:

  • 250g/ 8 oz Odlums Self Raising Flour
  • 125g / 4 oz Butter (softened)
  • 175g / 6 oz Dark Brown Sugar
  •  3 Eggs 150ml / 1/4 pt Milk
  • 1 level teaspoon Cinnamon 
  • 150g / 5 oz chopped Dates 
  • 90g / 3oz Dark Chocolate roughly chopped 
  • 60g / 2oz chopped Apricots 

How to make Caramel Sauce : 

  • 175g / 6 oz Butter 
  • 175g / 6oz Golden Syrup 
  • 2 tablespoons Dark Brown Sugar 

Method :

  • Place the butter sugar, eggs, flour, milk and cinnamon in a bowl and beat with a wooden spoon for 2-3 minutes, or with a hand whisk for 1-2 minutes, until light and fluffy. Stir in the chopped dates, chocolate pieces and apricots. 
  • Turn the mixture into a buttered 1.25 litre / 2 pint pudding bowl and cover with cling film. Pierce cling film several times and microwave on medium for 12-15 minutes, until the mixture is firm to the touch and a skewer inserted into the centre comes out clean, apart from traces of melted chocolate. Leave to rest for 5 minutes. 
  • Caramel Sauce Place all ingredients in a small saucepan and stir while bringing to the boil. Simmer for 1-2 minutes until syrupy Turn the pudding on to a serving plate and pour some of the caramel sauce over the top. Serve with cream and the remaining caramel sauce.

  • 2 Tablespoons Lemon Juice
  • 2 Tablespoons Finely Grated Orange Zest
  • 1 Teaspoon Ground Cinnamon
  • 1/2 Teaspoon Ground Nutmeg

 

Directions:

  • In a heavy bottomed saucepan, bring everything to a rapid boil, then reduce to a gentle boil.
  • Cook, uncovered for about 25 minutes or until mixture has thickened.
    Place in a bowl, cover, and refrigerate until needed.

Ingredients:

  • 1/3 cup warm water
  • 1 packet of yeast
  • 4 cups flour
  • 1 cup sugar
  • 4 large eggs, beaten
  • 3/4 cup butter, room temperature
  • 1/4 teaspoon salt
  • 1 1/2 teaspoons cinnamon
  • 1/2 teaspoon anise seed
  • 4 teaspoons vanilla extract
  • A small figurine or toy
  • Candied Fruit (about 2 cups of assorted fruit cut into strips such as figs, orange, lemon, mango or cherries)
  • 1 egg beaten (egg wash)
  • 1/3 cup sugar (topping)

Preparation:

Sprinkle the yeast on the surface of the water and let it sit for 10 minutes. In a large mixing bowl, combine the yeast water, flour, sugar, eggs, butter, salt, cinnamon, anise seed and vanilla extract. Mix until a dough forms. Knead the dough for 5 minutes, then cover and let rise in a warm area until dough is doubled in size, about 2 hours.
Punch dough down and shape into a wreath. You can do this by simply rolling it into a log shape then bending the ends around to form a circle, or you can make three thinner strips and braid them, then put the ends together. The wreath should be about 12-14 inches in diameter. Lift up one area and insert the toy by pushing it up through the bottom. Smooth out any lumps or tears.
Add the dried fruit by laying it across the top and pressing it in slightly. Let it rise until doubled. Brush top with egg wash, sprinkle with sugar and bake for approximatley 45 minutes at 350 degrees.

    • 16 oz. jar Spaghetti Sauce
    • 1/2 cup Scallions or Green Onions chopped
    • 2 1/4 oz. can Black Olives sliced
    • 1 cup Monterey Jack Cheese shredded 

    Instructions:

    1. Preheat broiler. Place tortillas on cookie sheets, without overlapping. On each tortilla, spread approximately 1/4 cup spaghetti sauce. Top each tortilla evenly with onions, olives, and cheese. Place under broiler until cheese begins to melt.

    Snow-Capped Cookies Recipes

    Ingredients:

    1. 1-3/4 cups  flour

    2. 1 cup  PLANTERS Chopped Pecans

    3. 3/4 cup  (1-1/2 sticks) butter, softened

    4. 1/2 cup  powdered sugar

    5. 2 tsp.  water

    6. 1/2 tsp.  vanilla

    7. 1/4 tsp.  salt

    8. 3 squares  BAKER'S Semi-Sweet Chocolate

    9. 3 squares  BAKER'S White Chocolate, coarsely grated



    Make It


    1. HEAT oven to 350°F. Combine flour and pecans; set aside. Mix butter and sugar until well blended.
       Add water, vanilla and salt; mix well. Gradually add flour mixture, stirring until well blended after
       each addition. Shape into 1-inch balls; place on ungreased baking sheets.
     
    2. BAKE 20 min. or until edges are golden brown. Cool on wire racks.
     
    3. MELT semi-sweet chocolate as directed on package. Dip each cookie halfway into melted
       chocolate, then press top lightly into grated white chocolate to create a snowy appearance. Let stand until set.

    1. 12  oz.  BAKER'S Semi-Sweet Chocolate

    2. 4 tsp.  shortening

    3. 1 pkg.  (3 oz.) JELL-O Raspberry Flavor Gelatin

    4.1 can  (14 oz.) sweetened condensed milk

    5. 1/4 tsp.  almond extract

    6. 2 pkg.  (7 oz. each) BAKER'S ANGEL FLAKE Coconut


    Make It


    1. LINE 8-inch square pan with foil, with ends of foil extending over sides; spray with cooking spray. 
       Microwave chocolate and shortening in medium microwaveable bowl on HIGH 1-1/2 min.; stir.    
       Microwave 1 min.; stir until chocolate is completely melted and mixture is well blended. Spread half 
       onto bottom of prepared pan. Refrigerate 10 min.
     
    2. MIX dry gelatin mix, milk and extract in large bowl until blended. Stir in coconut until evenly 
        coated; spoon over chocolate layer in pan. Press gently into chocolate layer. 
     
    3. POUR remaining chocolate mixture over coconut layer; spread to completely cover coconut. 
        Refrigerate 30 min. or until firm. Use foil handles to lift candy from pan; remove foil before cutting 
        candy into squares.

    Ingredients:


    1. 1-1/2 cups  HONEY MAID Graham Cracker Crumbs

    2. 1-1/2 cups   sugar, divided
    3. 1 tsp.  ground cinnamon, divided 

    4. 1/4 cup  butter, melted
    5. 4 pkg.  (8 oz. each) PHILADELPHIA Cream Cheese, softened
    6. 4 eggs
    7. 1-1/2 cups   fresh cranberries (1/2 of 12-oz. pkg.)
    8. 1/2 cup  water
    9. 1-1/2 cups  thawed COOL WHIP Whipped Topping

    How To Make It :-

    1. HEAT oven to 325ºF.

    2. MIX graham crumbs, 2 Tbsp. sugar, 1/2 tsp. cinnamon and butter until well blended; press onto bottom of 9-inch springform pan.
     
    3. BEAT cream cheese and 1 cup of the remaining sugar in large bowl with mixer until well blended. Add eggs, 1 at a time, mixing on low speed after each just until blended. Pour over crust.
     
    4. BAKE 55 to 1 hour 5 min. or until center is almost set. Cool on rack 15 min. Run knife around rim of pan to loosen cake; cool before removing rim. Refrigerate 4 hours.
     
    5. MEANWHILE, bring cranberries, water and remaining sugar and cinnamon to boil in saucepan on medium-high heat; simmer on low heat 8 to 10 min. or until sauce is slightly thickened and berries have softened, stirring occasionally. Cool slightly; refrigerate until ready to serve.

    South Indian Masala Dosa Recipe

    Masala Dosa is very famous South Indian Recipe. Its well known all over the India.Its tasty to eat and easy to make.Lets enjoy the recipe..
     
     
    Ingredients:



    Dosa shell:
    1. 1 1/2 cups rice
    2. 1/2 cup urad dal
    3. salt to taste
    4. Oil

    Masala Filling:
    1. 2 large potatoes
    2. 1 medium onion (chopped)
    3. 1/2 teaspoon yellow split peas
    4. 1/2 teaspoon mustard seed
    5. 1/2 teaspoon turmeric
    6. 1-2 green chili
    7. 1 tablespoon oil
    8. salt to taste 
     
    Preparation:
     
    Dosa shell
    • Separately soak rice and urad dal at least 6 hour or overnight in water.
    • Grind to paste.
    • Mix together, add salt with water to make batter.
    • Leave in room temperature overnight.
    • Mix onion and chilies to the thin batter.
    • Heat pan or griddle with little ghee or oil.
    • Spread the mix on pan in circular motion to make thin Dosa.
    • Cook on both the sides, if desired.

    Masala Filling (Spicy Filling):
    • Heat oil. Add mustard seed, peas, onions and spice.
    • Fry for about 5 minutes on medium heat or/until onions are turned into golden brown
    • Add potatoes and mix and cook some more Serve
    • Add filling inside Dosa and roll. Serve hot with Chutney.

    Ingredients: 

    • 1 lb. ground beef or lamb 
    • 1 teaspoon cumin 1/4 teaspoon black pepper 
    • 1 large onion, chopped 

    Preparation: 
    • In a mixing bowl, combine all ingredients. 
    • Combine well using wooden spoon, or with your hands. 
    • Mixing with your hands allows the mixture to combine better. 
    • Take about 1/4 meat mixture and make into a ball. Place ball through flat skewers, and shape into square cigar-like shapes. Repeat with remaining meat. Place on grill and cook about 4-6 minutes each side, until meat is no longer pink and is done.

    Moroccan Grilled Salmon Recipe

    Ingredients

    • 1/2 cup plain yogurt
    • Juice of 1 lemon, plus lemon wedges for garnish
    • 1 tablespoon extra-virgin olive oil, plus more for the grill
    • 2 to 3 cloves garlic, smashed
    • 1 1/2 teaspoons ground coriander
    • 1 1/2 teaspoons ground cumin
    • Kosher salt and freshly ground pepper
    • 4 6-ounce skinless center-cut salmon fillets
    • 1/4 cup chopped fresh cilantro or parsley, for garnish

    Directions

    Stir together the yogurt, lemon juice, olive oil, garlic, coriander, cumin, 1/4 teaspoon salt, and pepper to taste in a small bowl. Pour half of the sauce into a large resealable plastic bag; cover and refrigerate the remaining sauce. Add the salmon to the bag and turn to coat with the marinade. Refrigerate for 20 to 30 minutes, turning the bag over once.
    Preheat a grill to medium-high. Remove the salmon from the marinade and blot off excess yogurt with paper towels. Lightly oil the grill and add the salmon; cook, turning once, until browned on the outside and opaque in the center, 4 to 6 minutes per side, depending on the thickness. Serve with the reserved yogurt sauce and garnish with the herbs and lemon wedges.
