Thai Recipes : Garlic Chicken Thai

Ingredients :

• 1kg chicken thigh fillets, trimmed, cut into 2cm pieces
• 4 garlic cloves, crushed
• 1/4 cup brown sugar
• 1 large lemon, juiced
• 1 tablespoon cracked black pepper
• 1 cup coriander leaves, roughly chopped
• 1 cucumber, halved, deseeded, cut into long, thin strips
• 2 cups steamed rice and extra coriander leaves, to serve

 

Method

1. Place chicken, garlic, sugar, 1/4 cup lemon juice and pepper in a ceramic bowl. Season with salt. Toss to combine. Cover and refrigerate for 1 hour, if time permits. Stir in chopped coriander.
2. Heat a non-stick frying pan over medium-high heat. Cook chicken, in batches, turning occasionally, for 5 minutes or until cooked through.
3. Spoon rice into bowls. Top with chicken and pan juices, cucumber and coriander. Serve
