Egg Recipe : Devilled Eggs Recipe

Eggs are one of the most complete, naturally produced foods containing many essential nutrients for a balanced diet for adults and children alike. Ingredients :
  1. 2 cups all purpose flour
  2. 2 tsp ground cinnamon
  3. 1/4 tsp salt
  4. 1 tsp baking soda
  5. 2 tsp baking powder
  6. 1-cup canola oil
  7. 4 eggs
  8. 1 2/3 cup sugar
  9. 1 can pumpkin pie filling

FROSTING:
  1. 2 cups confectioners' sugar
  2. ½ cup butter
  3. 3-ounce cream cheese
  4. 1 tsp vanilla extract

Method:
  1.     Mix 2 cups all-purpose flour, 2 tsp baking powder, 2 tsp ground cinnamon, 1 tsp baking soda and ¼ tsp salt in a large mixing bowl and keep aside.
  2.     In a separate mixing bowl, mix pumpkin, sugar, oil and eggs and beat this mixture at a low speed until combined.
  3.     Now beat in the flour mixture until just combined.
  4.     Pour this mixture in 15 by 10 greased pan.
  5.     Now bake this batter for 25-30 minutes in a preheated pan at 350 F or until the toothpick inserted at the center of the cake comes out clean.
  6.     Now cool it completely for about 45 minutes.

    FROSTING:
  •     Mix the butter, cream cheese and vanilla in a large mixing bowl and beat it    at           medium speed with help of a mixer.
  •     Now beat in sugar until smooth.
  •     Spread this mixture over the cake and cut the cake into pieces.
  •     Now for the final touch, garnish the cinnamon pieces on the cake.

Kabab Recipe : Chicken Malai Kabab

Chicken malai kebabs make a great party food. These kebabs are very smooth and succulent and literally melt in the mouth. Enjoy the recipe..



Ingredients:
  • 1 kg chicken (boneless)
  • 30 ml malt vinegar
  • 1 egg
  • 60 gms processed cheese
  • 10 gms green coriander (finely chopped)
  • 100 ml oil
  • 4 portions yield
  • 15 gms salt
  • 50gms ginger garlic paste
  • 10 gms corn flour
  • 10 gms green chili (deseeded)
  • 120 ml fresh cream
  • 50 gms butter

How to make chicken malai kabab :
  •    Clean and make boneless chicken pieces 60 gms approx. each of chicken breasts and legs. Marinate with salt, ginger, garlic paste and malt vinegar. Leave at least for half an hour. Squeeze lightly against  palms and keep aside.
  •     In a tray, rub processed cheese with palm to a smooth paste. Add half egg to it, a corn flour and mix them well. Add a part of cream to soften it.
  •     To this mixture add the boneless marinated chicken lightly. Add chopped green chili and green coriander stalks. Pour in remaining cream and mix together. Let it rest for two to three hours in refrigerator.
  •     Put the marinated chicken pieces on skewer and half cook in tandoor. Take it out and hang it for ten minutes.
  •     Baste it with refined oil and cooking butter mixture and put back in tandoor till it gets light golden colour.
  •     Take out a garnished platter, sprinkle with lemon juice, clarified butter and kebab masala on top and serve accompanied with green coriander/ mint chutney, lachha onion, lemon wedge along with Onion Kulcha.

Ingredients:
  • 250 gm cottage cheese (paneer)
  • 100 gm curd (dahi)
  • 2 onion (pyaj)
  • 2 tomato (tamatar)
  • 1 tsp ginger (adrak), garlic (lahsun) paste
  • 2 green chilly (hari mirch) paste
  • 50 gm cashew nut (kaju) paste
  • 1 tsp tandoori masala
  • 1 tsp chat masala
  • 1 tsp chana masala
  • salt to taste


How to make paneer tikka masala:
  •     Cut round slices of tamatar and pyaj and keep them aside.
  •     Cut paneer in cubes.
  •     Mix tandoori,chat and chana masala along with half of the ginger garlic paste with dahi.
  •     Now add paneer cubes and mix well.
  •     Fix paneer cubes in a toothpick and put tomato and onion slices around paneer.
  •     Then cook them in a preheated oven and keep aside.
  •     Heat oil in a pan and put ginger garlic paste and green chilly in it.
  •     Cook for 5 minutes. Thereafter, add finely chopped onion and fry.
  •     Add finely chopped tomato and cook until oil floats on the surface.
  •     Then add kaju paste and cook for 5-10 minutes.
  •     Then add all the spices and cook for 2 minutes.
  •     Lastly add paneer cooked in oven and cook for 5 minutes.
  •     Garnish with coriander and serve hot.

How to make achari paneer:
  •     Cut the paneer and capsicum and keep aside.
  •     For the gravy- heat oil, add ginger , garlic and red chilli paste, tomato puree.
  •     All powered spices, salt to taste, kasoori methi and simmer for 8-10 minutes.
  •     Add in the paneer and peppers and mix well.
  •     Add in chopped pickle and masala.
  •     In a serving plate serve the jeera rice with the masala paneer and peppers.

Easy Chicken Recipe : Chicken Potpies


Ingredients :
  •     1/2 (15-ounce) package refrigerated pie dough (such as Pillsbury)
  •     Cooking spray
  •     1/8 teaspoon salt
  •     2 tablespoons all-purpose flour
  •     1 teaspoon dried rubbed sage
  •     1/4 teaspoon salt
  •     1/4 teaspoon black pepper
  •     8 ounces chicken breast tenders, cut into bite-sized pieces
  •     1 1/4 cups water
  •     1 1/2 cups frozen mixed vegetables
  •     1 cup mushrooms, quartered
  •     1 (10 1/2-ounce) can condensed reduced-fat, reduced-sodium cream of chicken soup

Preparation :
  •    Preheat oven to 425°.
  •    Cut 3 (4-inch) circles out of dough; discard remaining dough. Place dough circles on a baking sheet coated with cooking spray. Lightly coat dough with cooking spray; sprinkle evenly with 1/8 teaspoon salt. Pierce top of dough with a fork. Bake dough at 425° for 8 minutes or until golden.
  •     Combine flour, sage, 1/4 teaspoon salt, and pepper in a zip-top plastic bag; add chicken. Seal bag, and toss to coat. Heat a large nonstick skillet coated with cooking spray over medium-high heat. Add chicken mixture; cook 5 minutes, browning on all sides. Stir in water, scraping pan to loosen browned bits. Stir in vegetables, mushrooms, and soup; bring to a boil. Reduce heat, and cook 10 minutes. Spoon 1 cup chicken mixture into each of 3 (1-cup) ramekins or bowls; top each serving with 1 piecrust.

  •  Heat 1 1/2 teaspoons oil in a large nonstick skillet over medium-high heat. Add chicken breast halves to pan; sauté 2 minutes on each side or until lightly browned. Remove from pan. Add 1 1/2 teaspoons oil and remaining chicken pieces; sauté 2 minutes on each side or until lightly browned. Remove chicken from pan.
  •  Heat 1 tablespoon oil in pan. Add onion and garlic; sauté 5 minutes. Add celery; sauté 5 minutes. Add basil and next 8 ingredients (basil through tomatoes). Return chicken to pan; bring to a boil. Cover, reduce heat, and simmer 20 minutes.
  • Uncover and simmer 25 minutes or until chicken is tender. Discard bay leaves. Serve with pasta. Garnish with parsley sprigs, if desired.

Place chicken on grill rack coated with cooking spray, and grill for 6 minutes on each side or until chicken is done. Keep warm. Combine tomatoes, 1 1/2 tablespoons dressing, and olives in a medium skillet over medium heat, and cook for 2 minutes or until tomatoes soften slightly and mixture is thoroughly heated, stirring occasionally. Brush chicken with remaining 1 1/2 tablespoons dressing. Cut each chicken breast half into 3/4-inch slices. Top each chicken breast half with 1/4 cup tomato mixture. Ingredients :
  •     3 tablespoons low-sodium soy sauce, divided
  •     2 tablespoons dry sherry
  •     4 teaspoons cornstarch, divided
  •     1 pound skinless, boneless chicken breast, cut into bite-sized pieces
  •     1/2 cup fat-free, less-sodium chicken broth
  •     2 tablespoons oyster sauce
  •     1 tablespoon honey
  •     2 teaspoons sesame oil, divided
  •     3/4 cup chopped onion
  •     1/2 cup chopped celery
  •     1/2 cup chopped red bell pepper
  •     1 tablespoon grated peeled fresh ginger
  •     2 garlic cloves, minced
  •     1/2 cup chopped green onions (about 3 green onions)
  •     1/4 cup chopped unsalted dry-roasted cashews

Preparation :


    1. Combine 1 tablespoon soy sauce, sherry, 2 teaspoons cornstarch, and chicken in a large 
          bowl; toss well to coat. Combine remaining 2 tablespoons soy sauce, remaining 2 
          teaspoons cornstarch, broth, oyster sauce, and honey in a small bowl.

    2. Heat 1 teaspoon oil in a large nonstick skillet over medium-high heat. Add chicken 

          mixture to pan; sauté 3 minutes. Remove from pan. Heat remaining 1 teaspoon oil in  
          pan.  Add onion, celery, and bell pepper to pan; sauté 2 minutes. Add ginger and garlic; 
          sauté 1 minute. Return chicken mixture to pan; sauté 1 minute. Stir in broth mixture. 
          Bring to a boil; cook 1 minute, stirring constantly. Remove from heat. Sprinkle with 
          green  onions and cashews.


    Rice pilaf: Heat 1 tablespoon canola oil in a large saucepan over medium-high heat. Add 1/2 cup chopped onion and 2 teaspoons grated peeled fresh ginger to pan; sauté 2 minutes. Stir in 1 cup water, 1/2 cup long-grain rice, and 1/4 teaspoon salt; bring to a boil. Cover, reduce heat, and simmer 12 minutes or until liquid is absorbed. Remove from heat; stir in 2 tablespoons chopped fresh cilantro.

Ingredients:-
  • Semolina(Rava/Sooji) - 2 cups
  • Ghee - 3/4 cup
  • Sugar - 2 cups
  • Milk - 1/4 cup
  • Cashews(halved) - for garnishing



Method:-

1) Heat 3 tbsp of ghee in a nonstick pan.

2) Add rava and stir till the rava is light brown.

3) Allow it to cool.

4) Fry cashews in ghee and keep it aside.

5) Powder rava and sugar in a blender so as to blend them together. Keep this aside.

6) Sprinkle milk over the mix.

7) Make small balls by pouring little by little milk.

8) Place one cashew to each ball.

Note:- Use of excess of milk will result in a very smooth mixture and will not be able to role out balls for the ladoo and also the ladoo's will not be firm.

Pitha Recipe : Dudh Chitoi (Milk Chitoi) Pitha

Dudh Chitoi or Milk Chitoi pitha is a traditional dessert made usually in winter. It is sweet, sultry and creamy. It is delicious by itself.


Ingredients :
  •     3 cups of atop or pulao rice
  •     water as needed
  •     salt as needed
  •     oil for greasing the tawa
  •     1/2 cup of palm date jaggery
  •     2-3 cardamoms
  •     2 cinnamon sticks
  •     3 liters of milk

 Preparation method :


1. Soak the rice for 4-5 hours

2. Roast the rice in a tawa so that the rice grains become powdery.

3. Mix the roasted rice in 1 cup of lukewarm water and a pinch of salt.


4. Make sure that the mixture is neither too thin nor thick-so add just a bit of
     water at a time and mix.


5. Heat a thick tawa (the ones that are especially made to cook chitoi pitha) and   
     grease it with oil.


6. Now take a big spoon and pour a spoonful of the mixture in circular motion so that
     a round shaped chitoi pitha forms.


7. Put the lid on and cook for 4-5 minutes. The pitha will swell into a beautiful
     white round shape. Take it out and set aside.


8. Repeat to make a few more chitoi pitha.


9. In a cooking pot, mix the palm date jaggery with 3 cups of water.


10. Heat the mixture and sprinkle the cardamoms and cinnamon sticks.


11. Allow the mixture to boil.


12. Mean while, in a separate pot, boil the milk so that it thickens down to 2 liters
       of its volume from its original 3 liters.


13. Dip the chitoi pitha in this palm date jaggery syrup for a bit and set aside.


14. Mix the warm milk with the palm date jaggery syrup in which the chitoi pithas
       were initially dipped.


15. Now soak the chitoi pitha in this mixture for 4-5 hours. Serve chilled
.

Ingredients:
  • 1 coconut.
  • 1 cup sugar.
  • 2 cup Rice flour
  • 2 tblsp.plain flour(Maida)
  • 1 litr milk.
  • 10 gms raisins
  • 10 gms cashewnut
  • 1 tsp. cardamom powder.

Method:


1 Grate coconut and mix with sugar and cardamom powder. Mix well and keep it aside.

2. Heat a Pan and add Rice flour.Stirr for about 5 minutes. Take it out in an bowl and add  

     plain  flour to that. Now add Hot water and knead well to make a dough.

3.  Make small balls from the dough, spread each ball with hand and stuff the coconut sugar  

      mixture  into it. Fold it and seal the edges so that filling doesnt come out to get the shape of 
     'Puli' as in the picture.

4. Heat a pan and add milk. boil the milk for some time so that it get reduce to half. Add sugar 

     and cardamom powder. cook for a couple of minutes. Now add the pulies to the milk 
     slowly.cover it and let it cook for about 15 minutes with stirring in between. Add raisins   
    and  cashew nuts. Take it out in a serving tray. Serve cold.

Winter Piths Festival : Pati Shapta pitha Recipe

Ingredients:

• For stuffing

• 3 cups Grated Coconut
• 1 tbsp Khoya
• 1 cup Sugar/ Date Palm Jaggery




• For batter


• 3 cups All-Purpose Flour
• 1 tbsp Condensed Milk
• ½ cup Semolina
• ¼ cup Rice Flour
• 4 cups Milk
• Ghee to fry




How to make Pati Sapta:


• Take a pan and add grated coconut and sugar to it. Mash the coconut and mix it
   properly until the mixture becomes a little moist.


• Now turn on the flame and put khoya in the pan. Keep on stirring until the mixture
   turns a light brown and becomes sticky. Now turn off the flame and remove the pan.


• To make batter, add all-purpose flour, semolina, fine rice flour in a vessel and
   mix them.


• Occasionally add milk to make the consistency of the batter a little thin and
   smooth.


• Heat a frying pan and smear a little oil/ghee on it.


• Take a ladle full of batter and pour it on the frying pan. Evenly distribute the
   batter in a circle.


• When one side is cooked, flip over and put the stuffing lengthwise at the centre of
   the circle.


• Fold and let it cook until it turns a little brown in color. Put off the flame.


• Take it out, dash a tbsp of condensed milk on it.


• Pati Sapta is ready to serve.

WInter Piths Festival : Nokshi Pitha Recipe

Nokshi Pitha has a distinct flavor that makes this round shaped pitha so unique. Designing each pitha involves practice, but also passion. It is believed that traditionally women used to express their inner thoughts through these designs. These pithas are brought in for wedding ceremonies, and are also given to the groom's family as gifts.


Ingredients :
  •     water as needed
  •     3 cups of rice powder
  •     Salt as needed
  •     1 cup of date jiggery
  •     Oil for deep frying-as needed


 Preparation method :


1. Boil water and add the rice powder and salt. Mix and stir well to make a thick
   dough. Roll the dough well to make it soft and smooth. Ball some balls of out the
   dough.


2. Roll each boll out on a rolling pin to make a thick tortilla. Cut shapes out of
   it and make designs on each of the shapes.


3. On a separate bowl mix in the jiggery with water to make a syrup.


4. Heat oil in a deep drying fan. Dip each of the shapes (pitha) in the jiggery syrup
   well and fry in deep oil. Fry until the pitha turns golden brown

Winter Pitha Festival : Sweet Bhapa Pitha Recipe

Bhapa pitha is a famous winter pitha that is made of rice powder. It is one of the dessert items that truly represents Bengali cuisine.Bhapa pitha is a special sweet dish that is prepared usually on the winter. Enjoy the Recipe..



Ingredients :
  •     500 g of powdered rice
  •     1 cup of grated coconut
  •     1 cup of powdered palm date jaggery
  •     1/2 teaspoon of sugar / patali


 Preparation method :


1. Sprinkle a bit of water to the powdered rice. Quickly work through the mixture to
    make small crumbs.

2. Sift the crumbs-press and roll on the sieve to collect the powder in a bowl.

3. Pour in water in a steam or pressure cooker.

4. Stuff a teacup one-third with the powdered rice powder. Layer with grated coconut,
     sugar, and powdered palm date jaggery. Add the final layer with more powdered rice
     and fill up the tea cup completely.

5. Cover the mouth of the cup with slightly moist soft cotton cloth.

6. Place a steel sieve in the pressure cooker.

7.  Slowly place the tea cup with the pitha mix-the mouth of the tea cup should be 
      facing the sieve. Put the lid on and cook for 6-8 minutes.

8. Take the lid out, and carefully take out the tea cup with the cloth. Cover the
     mouth with your palm.

9.  Remove the cloth slowly and place the cup upside down on a serving plate.

10. Take out the tea cup to reveal the pitha.

11.Repeat to make 4-5 more pithas.
