Sweet and Sour Chicken Recipes

We can cook Chicken in various way. Now we enjoy here sweet n sour Chicken recipe...



Ingredients :

  • 1 tablespoon cornflour
  • 1/4 cup soy sauce
  • 440g can pineapple pieces in natural juice, drained, reserving juice
  • 1/4 cup white wine vinegar
  • 1/4 cup brown sugar
  • 1 tablespoon olive oil
  • 500g chicken tenderloins, tendons removed
  • 1/2 green capsicum, cut into thin strips
  • 1/2 red capsicum, cut into thin strips
  • 3cm piece ginger, peeled, grated
  • 2 garlic cloves, crushed
  • steamed jasmine rice, to serve



Method


  1. Combine cornflour and soy sauce in a jug. Stir until mixture is smooth. Add reserved pineapple juice, vinegar and sugar. Stir until sugar has dissolved.
  2. Heat oil in a non-stick frying pan or wok over medium-high heat. Add chicken and cook for 3 minutes each side or until light golden.
  3. Add capsicum, ginger and garlic to pan. Cook for 1 to 2 minutes or until tender. Add soy sauce mixture to pan and bring to the boil. Reduce heat to medium-low. Add pineapple pieces. Simmer, uncovered, for 10 minutes or until sauce has thickened and chicken is cooked through. Serve with rice.

Ingredients :

3-3⁄4 cups sifted cake flour
1-1⁄2 tablespoons cocoa powder
1-1⁄2 teaspoons salt
1-1⁄2 teaspoons baking soda
1-1⁄2 tablespoons white vinegar
2-1⁄4 cups granulated white sugar
3⁄4 cup vegetable oil
3 eggs
1-1⁄2 cups buttermilk
1-1⁄2 teaspoons pure vanilla extract
2 ounces red food coloring

 
 METHOD :
  1. Preheat the oven to 350 degrees F. Grease and flour a 9-x-13-inch cake pan, and set it aside.
  2. In a large bowl, combine the cake flour, cocoa powder, and salt, and whisk them together with a balloon whisk.
  3. In a small bowl, dissolve the baking soda in the vinegar. Stir well to make sure the baking soda is fully dissolved.
  4. In a large bowl, beat the sugar and oil together until blended. Add the eggs one at a time, beating well after each addition.
  5. Add the flour mixture to the sugar and oil mixture in four additions, alternating with the buttermilk. (Begin and end with the flour.) Mix each flour addition just until blended.
  6. Beat in the vanilla and food coloring. Stir the baking soda mixture again, and fold it into the batter with a rubber spatula.
  7. Bake the cake for 35 minutes, or until a toothpick inserted in the center comes out with moist crumbs attached.

Popcorn Chicken recipe

Ingredients:

1. 4 boneless skinless chicken breasts (cut into small chunks)
2. 2 cups all purpose flour
3. 2 ½ teaspoons salt
4. ¾ teaspoon pepper
5. 1/8 teaspoon paprika
6. 1/8 teaspoon garlic powder
7. 1/8 teaspoon baking powder
8. 1 egg (beaten)
9. 1 cup milk
10. 2 cups panko bread crumbs
11. oil (for deep frying)

 

Cooking Instructions:

Step 1: In a shallow bowl beat together 1 egg and 1 cup of milk. In another shallow bowl (or pie plate) combine flour, salt, pepper, paprika, garlic powder, and baking powder. Mix well. In another shallow plate add panko bread crumbs.

Step 2: Roll each piece of chicken first in the flour mixture, then dip in the egg mixture and then roll in panko bread crumbs. Once the chicken pieces are coated once repeat the process by rolling the chicken bits in the flour mixture, dipping in the egg mixture and rolling in the panko bread crumbs.

Step 3: Heat oil in a deep fryer for 375 degrees. Deep fry chicken in batches until golden brown and fully cooked (the internal temperature has reached 165 degrees). Drain on paper towels.

Ingredients: 

  • 1/4 cup low-fat buttermilk
  • 2 tablespoons Dijon mustard
  • 4 (6-ounce) chicken cutlets
  • 1/3 cup panko (Japanese breadcrumbs)
  • 1/3 cup finely chopped walnuts
  • 2 tablespoons grated fresh Parmigiano-Reggiano cheese
  • 3/4 teaspoon minced fresh rosemary
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • Cooking spray
  • Rosemary leaves (optional)

     

    Preparation :

  • 1. Preheat oven to 425°.
  • 2. Combine buttermilk and mustard in a shallow dish, stirring with a whisk. Add chicken to buttermilk mixture, turning to coat.
  • 3. Heat a small skillet over medium-high heat. Add panko to pan; cook 3 minutes or until golden, stirring frequently. Combine panko, nuts, and next 4 ingredients (through pepper) in a shallow dish. Remove chicken from buttermilk mixture; discard buttermilk mixture. Dredge chicken in panko mixture.
  • 4. Arrange a wire rack on a large baking sheet; coat rack with cooking spray. Arrange chicken on rack; coat chicken with cooking spray. Bake at 425° for 13 minutes or until chicken is done. Garnish with rosemary leaves, if desired.

 Chocolate Cake Ingredients:
  • 3/4 cups butter or margarine, softened
  • 3 eggs
  • 2 cups sugar
  • 2 cups flour
  • 3/4 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 3/4 teaspoon baking powder
  • 2 teaspoon vanilla
  • 1 1/2 cup milk 
      




     

     How to make Chocolate Cake:
     
  • Pre-heat oven to 350 degrees.
  • Grease and flour three 6" X 1 1/2" round cake pans.
  • Mix together flour, cocoa powder, baking powder and baking soda. Set aside.
  • In a large bowl, beat butter, eggs and vanilla.
  • Gradually add sugar.
  • Beat on medium to high speed for about 3-4 minutes until well mixed
  • Alternately combine in flour mixture and milk to batter while beating.
  • Continue to beat until batter is smooth.
  • Pour equal amounts of batter into greased and floured round cake pans.
  • Bake 30 to 35 minutes.
  • Check with a toothpick to se if it is done. Bake a few minutes more, if needed.
  • Remove from oven and allow cakes to cool in pans for a few minutes.
  • Place cakes on a wire rack, to them allow to completely cool.
Frosting Cakes:

  2. Place one round cake on a cake plate.
  3. Spread frosting on top.
  4. Repeat this for the third cake.
  5. Frost top of the third cake.
  6. Frost the side for the cake.

Chocolate Recipe : How To Make Chocolate at home

Ingredients:

2 cups cocoa powder,
¾ cup butter,
½ cup sugar,
2/3 cup milk,
¼ tsp plain flour,
¼ cup powdered sugar and
1 cup water

 

Method:

Place cocoa and butter in processor and mix until they form a paste. Fill the pan about ¼ full with water. Then place the bowl on top of the water. Put the chocolate paste in the bowl and then heat until hot. Put the mixture back in the processor and mix till smooth. Then warm the milk to room temperature. Add sugar, flour and milk to the paste and mix well. Pour the mixture into molds and place it in the fridge till they become hard. Take the pieces out and much away!

Cake Recipe : Lemon Drizzle Cake

Ingredients

1. 6oz self raising flour (sifted)

2. 6oz caster sugar

3. 6oz butter

4. 3 medium eggs

5. 1 large unwaxed lemon

6. teaspoon of caster sugar (separate to the other sugar needed)

7. teaspoon of icing sugar to decorate

 

Preparation :

First, pre-heat the oven to 190C/375F/Gas Mark 5 and then grease and line your baking tray. I use a rectangular tray that is approximately 20cm x 25cm but of course this would work just as well with a round tin too. I have even been known to do it in a love heart tin but that’s just me!
Put the butter into a mixing bowl and beat until completely softened then add the sugar and cream together until the mixture goes pale in colour.

In a separate bowl, beat the eggs and add them slowly to the butter and sugar mixture. Just do it a little at a time or else the mixture can split. (If it does split, then adding a little of the flour should fix it.)
Add the sifted flour to the mixture and mix together well until smooth but don’t over stir.

Then, take your lemon and zest straight into the bowl. I tend to do this straight over the bowl as not only does it save on washing up, it also means that you don’t lose any of that gorgeous lemon zest as if you are anything like me, it can fly all over the place!
Once zested, cut the lemon in half. Juice one half and stir into the cake mixture. Then juice the other half, add the teaspoon of caster sugar and keep it to one side for now (you’ll need this bit later to make your drizzle.)
Take the cake mixture and put it into the prepared tin, making sure to smooth out the mixture. Then pop it in the oven for about 20-25 minutes until it is golden brown. The best test to make sure that it is cooked right through is to stick a knife in and if it comes out clean, it is cooked, if it comes out with mixture on then it needs a little longer. This tip was passed down to me from my Dad (which I think was passed down to him from his Aunt) and of course the old tricks really are the best!

Once the cake comes out of the oven, whilst it is still hot, prick all over with a skewer then using a spoon spread over your drizzle mixture from earlier and  then leave it to cool completely. Then, once cool I like to sprinkle over a little icing sugar with a sieve to make it look pretty.

Thai Recipe : Shrimp Pad Thai Noodles

Total Time: 40 minutes

Yield: SERVES 2-3

Ingredients:

  • 8 oz. Thai rice noodles (linguini width), or enough for 2 people
  • 12-15 small to medium raw shrimp, shells removed
  • 1 boneless chicken breast or 1-2 thighs*, chopped up into small pieces
  • 1 Tbsp. soy sauce
  • 4 green onions, sliced (keep white separate from green)
  • 3-4 cloves garlic, minced
  • 1 tsp. grated galangal OR ginger
  • 1-2 fresh red or green chilies (or as much or little as you like), finely sliced
  • 1 egg
  • 2-3 cups bean sprouts
  • handful fresh coriander/cilantro
  • 1/3 cup dry roasted unsalted peanuts, chopped
  • 2-3 Tbsp. vegetable oil for stir-frying (e.g. coconut, peanut, corn, sunflower, etc...)
  • lime wedges for serving
  • PAD THAI SAUCE:
  • 1 to 1+1/2 Tbsp. tamarind paste, to taste (available at Asian/Indian food stores)
  • 1/4 cup chicken stock
  • 3 Tbsp. fish sauce
  • 1 Tbsp. soy sauce
  • 1/2 to 1 tsp. chili sauce, OR 1/3 to 3/4 tsp. cayenne pepper, to taste
  • 1/8 tsp. ground white pepper
  • 3-4 Tbsp. palm sugar OR brown sugar

 

Preparation:

  1. Bring a large pot of water to boil, then switch off heat. Dunk in noodles and soak 3-4 minutes, or until noodles are limp but still firm and a little "crunchy". Tip:The noodles must remain 'undercooked' at this stage, as they will be fried later. This is the key to chewy 'al dente' rice noodles. Drain and rinse thoroughly with cold water. Set aside.
  2. Toss sliced chicken in 1 Tbsp. soy sauce and set aside.
  3. In a small bowl or cup, combine all 'Pad Thai Sauce' ingredients (note that if your tamarind paste is very thick, only add 1 Tbsp; if thin/runny, add 1+1/2 Tbsp). Taste-test the sauce, looking for a very strong-tasting flavor that tastes sour-sweet first, followed by salty and spicy. Set aside.
  4. Warm a wok or large frying pan over medium-high heat. Add 2 Tbsp. oil and swirl around, then add the white parts of the onion (reserve green parts for serving), plus garlic, galangal/ginger, and chili. Stir-fry 1 minute.
  5. Add chicken and stir-fry 2 minutes, or until opaque when cut through. Add shrimp and continue stir-frying 2-3 more minutes, or until shrimp are pink and plump.
  6. Push ingredients aside, making room in the center of your wok/pan and crack in the egg. Stir-fry quickly to scramble (30 seconds to 1 minute).
  7. Add the noodles and drizzle over 1/3 of the pad Thai sauce. Using 2 utensils and a gentle turning motion, stir-fry everything together. Keep heat between medium and high - you want it hot enough to cook the noodles, but not so hot that they'll burn. Add more sauce every 30 seconds to 1 minute as the pan/wok dries out. Continue stir-frying until sauce is gone and noodles begin to get sticky and 'glossy' and taste chewy ('al dente' (5 to 7 minutes).
  8. Turn off heat. Fold in bean sprouts and taste-test. If not flavorful or salty enough, add more fish sauce. If too salty or sweet, add a drizzle more tamarind or a good squeeze of lime. If not spicy enough, add more chili sauce or fresh-cut chilies.
  9. Sprinkle over the green onion, nuts, and coriander, and garnish with lime wedges (to be squeezed over before eating). Thai chili sauce can be served on the side for those who like it extra spicy. ENJOY!

Fried Rice Recipe

Fried Rice is very well known to us as a Chinese recipe..Here the Recipe for you to make it at your home...


Ingredients:


400 gm Rice
100 gm Ghee or butter
65 gms onion
2 gms cinnamon
2 gms Bay leaf
1 gm peppercorns
6 gms Salt


How to make fried rice:
  • Heat the ghee in a large saucepan and add the finely sliced onion.
  • Fry till golden brown, remove from the pan and keep aside.
  • To the hot fat, add the washed and drained rice and the spices.
  • Keep stirring and fry for 4-5 minutes till the rice appears glazed. Add salt and boiling water an inch above the rice.
  • Boil and simmer till the water is almost absorbed and then put into a very slow oven at 250 degree and leave for 20-25 minutes till the rice is cooked.
  • Serve garnished with fried onions. Hard-boiled eggs cut in slices may also be used as a garnish.

Ingredients:

2½ cups Chopped Cooked Chicken
1× 10¾ oz Condensed Cream of Chicken Soup
1× 8 oz Kraft Shredded Colby & Monterey Jack Cheese, divided
1 cup Breakstone's Sour Cream, divided
¼ cup Chopped Cilantro, divided
12 8" Flour Tortillas
1½ cups Salsa                                

Directions:

1. HEAT oven to 350 degrees F
2. MIX chicken, soup, 1 cup cheese, 1/2 cup sour cream and 3 tablespoons cilantro until well blended. Spoon down centers of tortillas, adding about 1/4 cup to each; roll up.
PLACE, seam-sides down, in 13x9-inch baking dish sprayed with cooking spray; top with salsa and remaining cheese.
BAKE 25 minutes or until heated through. Top with remaining cilantro and sour cream.

Recipe For Chicken Drumsticks

Ingredients:


6 Chicken Drumsticks
1 tbsp ginger-garlic paste
2 tbsp All-purpose flour (maida)
2 tbsp corn flour
2 eggs (beaten)
1/4 tsp pepper / chili powder
A pinch of sugar
Salt To Taste
1 tbsp Soya sauce
Oil for frying

 
How to make chicken drumsticks:
  • In a bowl add Soya sauce, ginger-garlic paste, sugar.
  • Add chicken wings coat well and set aside for 1/2 hour.
  • Make a smooth batter by adding corn flour, all purpose flour, salt, pepper and beat in the eggs .
  • Heat oil in a wok / kadhai.
  • Dip each wing in the batter and coat evenly and deep fry the drumsticks till golden brown.
  • Serve chicken drumsticks hot with thin slices of onions and lemon.

Ingredients:


Part A:
2 lbs. boneless chicken breast
1/4 cup yogurt
3 tsp minced ginger
3 tsp crushed garlic
1/4 tsp white pepper
1/4 tsp cumin powder
1/4 tsp mace
1/4 tsp nutmeg
1/4 tsp green cardamom powder
1/4 tsp chili powder
1/4 tsp turmeric
3 tbsp lemon juice
4 tbsp vegetable oil
Melted margarine (for basting)
Part B:
5 oz. tomato paste
10 oz. tomato puree
2 lbs. tomatoes, chopped
2 tsp ginger paste
2 tsp garlic paste
2 tsp green chilies
1 tbsp red chili powder
2 tsp cloves
8 green cardamoms
Salt To Taste
3 tbsp butter
2/3 cup cream
1 tsp fenugreek
2 tsp ginger, julienned
honey to taste



   
Preparation:
  • Whisk all of the ingredients in Part A together in a large bowl. Add the chicken breast, cut into 2 inch cubes.
  • Marinate overnight in the refrigerator. Preheat oven to 350º F. Bake the chicken for 8 minutes, basting with margarine twice. Drain excess marinade and bake for another 2 minutes.
  • While doing this, make the sauce in Part B. Deseed and chop green chilies. Put tomatoes, tomato paste and tomato puree in a pot and add approximately 4-1/4 cups of water.
  • Add ginger and garlic paste, green chilies, red chili powder, cloves, cardamoms, and salt. Cook over low heat until reduced to a thick sauce. Strain through a strainer and bring to a boil. Add butter and cream. Stir.
  • If the sauce tastes sour, add honey to taste. Add fenugreek and ginger juliennes, stir, and serve with the chicken tikka masala

Ingredients:


1/4 pint/150ml natural yogurt
2 ounces/50g ground almonds
1 1/2 tsp chili powder
1/4 tsp crushed bay leaves
1/4 tsp ground cloves
1/4 tsp ground cinnamon
1 tsp garam masala
4 green cardamom pods
1 tsp ginger pulp
1 tsp garlic pulp
14 ounce/400g can tomatoes
1 1/4 tsp salt
2 pounds/1kg chicken, skinned, boned and cubed
3 ounces/75g butter
1 tbsp corn oil
2 medium onions, sliced
2 tbsp fresh coriander, chopped
4 tbsp cream

 
How to make butter chicken :
  • Place the yogurt, ground almonds, all the dry spices, ginger, garlic, tomatoes and salt in a mixing bowl and blend together thoroughly.
  • Put the chicken into a large mixing bowl and pour over the yogurt mixture.
  • Set aside. Melt together the butter and oil in a medium karahi, wok or frying pan. Add the onions and fry for about 3 minutes. Add the chicken mixture and stir-fry for about 7 to 10 minutes.
  • Stir in about half of the coriander and mix well. Pour over the cream and stir in well. Bring to the boil. Garnish the indian butter chicken with the remaining chopped coriander to serve the chicken curry.

Chilli Chicken Recipes

Ingredients:


500-600gms. boneless chicken (cut into1-inch cubes)
2 tbsp Soya sauce
1 egg
2 tbsp corn flour / corn starch
5-6 green chilies (finely chopped)
2 green onion tops (finely chopped), if available
1 tsp garlic paste
Salt To Taste
1/2 tsp white pepper powder or to taste
1 tsp sugar
A pinch of ajinomoto (optional)
2 cups chicken broth / water
1 tbsp oil
Oil to fry

 

How to make chili chicken :
  • Take 1tbsp. Soya sauce, 1tbsp. corn flour, salt, egg in a bowl and marinate chicken pieces in the the mixture for about 10-15 minutes.
  • Heat oil and deep fry the marinated chicken pieces till golden brown.
  • Now in a separate wok / kadhai heat 1 tbsp. oil and add garlic paste and green chilies and sauté for few seconds.
  • Add 2 cups of chicken broth or water. Bring to boil and add sugar, pepper powder, salt , ajinomoto and remaining Soya sauce.
  • Add fried chicken pieces to it and cook for few minutes.
  • Dissolve the remaining corn flour in 1/2 cup water and add to the curry stirring constantly to avoid lumps. Cook for 2-3 minutes.
  • Serve chilli chicken hot garnished with chopped green onion tops. Goes well with steamed / boiled rice.

Recipe For Badam ka Halwa

Ingredients:


2 cups Badam
2 1/2 cups Sugar
2 drops Kesar Colour
1 cup Ghee
1 cup Milk

  
How to make badam halwa:
  • Leave the almonds in hot water for 1 hour.
  • Remove the outer skin and grind to a paste with the milk.
  • Make sugar syrup and boil till it reaches a one string consistency.
  • Add the badam paste and cook till it thickens.
  • Add the kesar colour.
  • Add ghee little by little stirring continuously on low heat.

Recipe For Golap Jamun

Ingredients:


1 cup Carnation Milk Powder
1/2 cup all purpose flour
1/2 tsp baking soda
2 tablespoons butter -melted
Whole milk just enough to make the dough

For the Sugar Syrup
2 cups Sugar
1 cup water
Oil for frying 

  

How to make gulab jamun:
  • Make the dough by combining the milk powder, Bisquick, butter. Add just enough whole milk to make a medium-hard dough. Divide the dough into 18-20 portions. Make balls by gently rolling each portion between your palms into a smooth ball. Place the balls on a plate. Cover with a damp yet dry kitchen towel.
  • Heat the oil on high and then lower the heat to medium. Slip in the balls into the hot oil from the side of the pan, one by one. They will sink to the bottom of the pan, but do not try to move them. Instead, gently shake the pan to keep the balls from browning on just one side. After about 5 mins, the balls will rise to the surface. The Gulab Jamuns should rise slowly to the top if the temperature is just right. Now they must be gently and constantly agitated to ensure even browning on all sides.
  • If the temperature of the oil is too high then the gulab jamuns will tend to break. So adjust the temperature to ensure that the gulab jamuns do not break or cook too quickly.
  • The balls must be fried very slowly under medium temperatures. This will ensure complete cooking from inside and even browning.
Sugar Syrup
  • The syrup should be made earlier and kept warm. To make the hot sugar syrup add mix the 2 cups of sugar to 1 cup of water. Add 4-5 cardamom pods, slightly crushed and a few strands of "Kesar". Mix with a spoon and then heat at medium heat for 5-10 minutes until sugar is all dissolved in water. Do not overheat, that will caramelize the sugar.
  • Transfer this hot syrup into a serving dish. Keep warm on stove. Add the fried gulab jamuns directly into the warm syrup. Leave gulab jamun balls in sugar syrup overnight for best results. They can be served warm or at room temperature.
