Low Calorie Food Recipe : Mexican Polenta Scramble

Ingredients :
  •     1 tablespoon extra-virgin olive oil
  •     4 poblanos or 2 green bell peppers, diced
  •     1 pint cherry tomatoes, halved
  •     2 teaspoons ground cumin
  •     1/4 teaspoon salt
  •     1 16-ounce tube prepared plain polenta, cut into 1/2-inch slices
  •     1 bunch scallions, trimmed and sliced
  •     1 cup shredded reduced-fat Cheddar cheese, preferably sharp
  •     1/4 cup chopped fresh cilantro
  •     1 tablespoon lime juice
  •     1 avocado, diced
  •     2 tablespoons pepitas, toasted

Preparation:

   1. Heat oil in a large nonstick skillet over medium-high heat. Add peppers and cook, stirring occasionally, until bright green and just starting to soften, about 3 minutes. Stir in tomatoes, cumin and salt; cook, stirring often, until the tomatoes start to break down, 2 to 3 minutes. Crumble polenta slices into the pan and cook, stirring occasionally, until heated through, 1 to 2 minutes. Stir in scallions, cheese, cilantro and lime juice. Serve the scramble topped with diced avocado and toasted pepitas.

Mexican Salsa Recipe

Salsa is a Mexican food item..you can use it as snacks.its easy to make and very delicious to eat..Lets enjoy the Recipes...

Ingredients:

  • 2 large tomatoes, seeded (don't have to) and diced
  • 1/2 small sweet onion, finely chopped (like Texas sweet or red)
  • 1 -3 jalapeno, finely chopped
  • 2 tablespoons cilantro, chopped
  • 1 clove garlic, finely chopped
  • 2 tablespoons lime juice, fresh squeezed
  • 1 teaspoon olive oil
  • 3/4 teaspoon salt
  • 1/2 teaspoon cumin
  • 1/4 teaspoon black pepper

 
Directions:

  • 1. Combine all the ingredients and chill for 2 hours before serving with chips.
  • 2 . The Cilantro is very important to this dish.

 

Mexican Recipe : Chicken Fiesta Salad

 Ingredients : 

1. 2 skinless, boneless chicken breast halves

2. 1 (1.27 ounce) packet dry fajita seasoning, divided

3. 1 tablespoon vegetable oil

4. 1 (15 ounce) can black beans, rinsed and drained

5. 1 (11 ounce) can Mexican-style corn

6. 1/2 cup salsa

7. 1 (10 ounce) package mixed salad greens

8. 1 onion, chopped

9. 1 tomato, cut into wedges

 

Directions :

  1. Rub chicken evenly with 1/2 the fajita seasoning. Heat the oil in a skillet over medium heat, and cook the chicken 8 minutes on each side, or until juices run clear; set aside.
  2. In a large saucepan, mix beans, corn, salsa and other 1/2 of fajita seasoning. Heat over medium heat until warm.
  3. Prepare the salad by tossing the greens, onion and tomato. Top salad with chicken and dress with the bean and corn mixture.

Mini Mexican Pizzas Recipes

      Ingredients:

  • 6 Mission® Flour Tortillas
  • 16 oz. jar Spaghetti Sauce
  • 1/2 cup Scallions or Green Onions chopped
  • 2 1/4 oz. can Black Olives sliced
  • 1 cup Monterey Jack Cheese shredded 

Instructions:

1. Preheat broiler. Place tortillas on cookie sheets, without overlapping. On each tortilla, spread approximately 1/4 cup spaghetti sauce. Top each tortilla evenly with onions, olives, and cheese. Place under broiler until cheese begins to melt.
