- 10-12 lamb fillets
- 1 teaspoon olive oil
- 1 clove garlic
- 1 teaspoon fresh rosemary leaves
- Juice of ½ lemon
- Combine all ingredients in a shallow dish, allow to marinate for at least 30 minutes.
- Heat a non-stick frypan to high heat and cook lamb for 3 minutes on each side for medium ‘doneness’.
- Remove from heat and rest for 5 minutes.
