Russian Healthy Snack Recipe With Carrots and Raisins

Most people eat to lose weight, get healthy and build muscle.These low-calorie, healthy snacks will satisfy your diet cravings.


Ingredients:
  1. 2 large carrots
  2. 1/4 cup raisins
  3. 3 tablespoons sour cream
  4. 2 -3 teaspoons sugar

Directions:

1. Place raisins in a small amount of water, so they plump up a little. (this step is
   optional) Grate carrots on a smallest part of your grater.

2. Combine grated carrots, sour cream, raisins (take them out of water prior) and then
   add sugar (adjust to your taste).

3. We love it just the way it is and my l'il one gets his nutrition.

4. Beware, this combination may make your kids grow few inches taller. Carotene with
   sour cream and sugar is a dangerous mix for your kid's growth potentia

Russian Chicken Kiev Recipe

This is another Russian Dish. Chicken Kiev is chicken breasts wrapped around some garlic and herb butter before cooking. They can either be fried or baked. Try this chicken Kiev recipe for an easy dinner that is sure to impress.


Ingredients :
  1.     1/3 cup butter
  2.     1/2 teaspoon ground black pepper
  3.     1 teaspoon garlic powder
  4.     2 pounds skinless, boneless chicken breast halves
  5.     2 eggs
  6.     3 tablespoons water
  7.     1/4 teaspoon ground black pepper
  8.     1/2 teaspoon garlic powder
  9.     1 teaspoon dried dill weed
  10.     3/4 cup all-purpose flour
  11.     3/4 cup dry bread crumbs
  12.     2 cups vegetable oil for frying
  13.     1/2 lemon, sliced
  14.     1/4 cup chopped fresh parsley

Directions :

 1. Combine 1/3 cup butter, 1/2 teaspoon pepper and 1 teaspoon garlic powder. On a 6x6
    inch piece of aluminum foil, spread mixture to about 2x3 inches. Place this
    mixture in the coldest section of your freezer and freeze until firm. This can be
    done ahead of time.

 2. Remove all fat from the chicken breast. If using whole chicken breasts, cut them
    in half. Place each chicken breast half between 2 pieces of waxed paper and using
    a mallet, pound carefully to about 1/4 inch thickness or less.

 3. When butter mixture is firm, remove from freezer and cut into 6 equal pieces.
    Place one piece of butter on each chicken breast. Fold in edges of chicken and
    then roll to encase the butter completely. Secure the chicken roll with small
    skewers or toothpicks.

 4. In a mixing bowl, beat eggs with water until fluffy. In a separate bowl, mix
    together 1/4 teaspoon black pepper, 1/2 teaspoon garlic powder, dill weed and
    flour. Coat the chicken well with the seasoned flour. Dip the floured chicken in
    the egg mixture and then roll in the bread crumbs. Place coated chicken on a
    shallow tray and chill in refrigerator for 30 minutes.

 5. In a medium size deep frying pan, heat vegetable oil to medium-high. Fry chicken  
    for about 5 minutes then turn over and fry for 5 minutes longer or until the
    chicken is golden brown. To test for doneness, cut into one of the rolled chicken
    breasts to make sure it doesn't have a pink interior. Serve immediately, garnished
    with a sliced lemon twist and a sprinkling or parsley.

Russian Vegetable Pie Recipe

Ingredients :

  1.     4 eggs
  2.     1 1/4 cups all-purpose flour
  3.     1 teaspoon white sugar
  4.     1 teaspoon salt
  5.     3 tablespoons butter
  6.     4 ounces cream cheese, softened
  7.     2 tablespoons butter
  8.     1 onion, chopped
  9.     1 small head cabbage, shredded
  10.     1/8 teaspoon dried marjoram
  11.     1/8 teaspoon dried tarragon
  12.     1/4 teaspoon dried basil leaves
  13.     salt and pepper to taste
  14.     1 tablespoon butter
  15.     8 ounces fresh mushrooms, sliced
  16.     4 ounces cream cheese, softened
  17.     1/2 teaspoon dried dill weed

Directions:

1. Preheat oven to 400 degrees F (200 degrees C.) Place eggs in a saucepan and cover
   with cold water. Bring water to a boil and immediately remove from heat. Cover and
   let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool,
   peel and slice.

2. In a large bowl, combine flour, sugar and salt. Cut in butter until mixture
   resembles coarse crumbs. Stir in cream cheese until mixture forms a ball. Roll out
   2/3 of the pastry and line a 9 inch pie dish. Roll out the remaining pastry and 
   make a circle large enough to cover the dish. Put it away to chill.

3. In a large skillet, melt about 2 tablespoons butter. Add the onion and cabbage and
   saute for several minutes, stirring constantly. Season with marjoram, tarragon,
   and basil, salt and pepper. Cook, stirring occasionally, until the cabbage is  
   wilted and the onions are soft. Remove from the pan and set aside. Add another
   tablespoon of butter to the pan and saute the mushrooms lightly for about 5 to 6
   minutes, stirring constantly.

4. Spread the softened cream cheese in the bottom of the pie shell. Arrange the egg
   slices in a layer over the cheese. Sprinkle them with chopped dill, then cover them
   with the cabbage. Make a final layer of the sauteed mushrooms and cover with the
   circle of pastry. Seal and flute the edges of the crust. With a sharp knife, cut a
   few short slashes through the top crust.

5. Bake in the preheated oven for 15 minutes. Reduce temperature to 350 degrees F (175
   degrees C) and bake for 20 to 25 minutes, or until golden brown.

Russian Paska Recipe

Ingredients:

  1.     2 (8 ounce) packages cream cheese, softened
  2.     1 (8 ounce) container cottage cheese
  3.     1 (8 ounce) container sour cream
  4.     1/4 cup butter, melted
  5.     1 cup white sugar
  6.     1/4 teaspoon lemon extract
  7.     1 teaspoon vanilla extract
  8.     1/2 cup finely chopped blanched almonds
  9.     1/2 cup currants

Directions :


 1. In a medium bowl, thoroughly blend cream cheese, cottage cheese, sour cream and
    butter.

 2. Gradually fold in sugar, lemon extract, vanilla extract, almonds and currants.

 3. Transfer the mixture to a shallow medium dish. Cover with a cloth, and chill in
    the refrigerator 8 hours, or overnight.

Russian Potato Salad Recipe

This salad consists of potatoes, turkey hot dogs, pickles, scallions, hard-boiled eggs, and sweet peas. All of the ingredients are finely chopped and dressed with mayonnaise. Ingredients:
  1.     5 large potatoes
  2.     1 (16 ounce) package turkey hot dogs
  3.     5 eggs
  4.     5 large dill pickles, chopped
  5.     1 bunch green onions, chopped
  6.     1 (15 ounce) can baby peas, drained
  7.     salt to taste
  8.     1 cup mayonnaise

Directions :

1. Place the potatoes in a large pot, and fill with enough water to cover. Bring
    to a boil, and cook until a fork can be easily inserted and removed, about 20
    minutes. Drain and cool slightly. During the last 10 minutes, boil the hot dogs
    and eggs. Drain everything, and set aside to cool.

2. Peel the potatoes, and cut into cubes. Chop hot dogs. Place everything in a large
   bowl, and mix in the pickles, onions and peas. Peel the eggs, and grate them on
   top of the salad. Add mayonnaise and salt to individual servings.

Russian Pelmeni Recipe

Pelmeni are common in Russia and have similar names in other languages..This recipe for Russian little meat dumplings -- pelmeni or peljmeni -- is traditionally filled with ground beef, pork, and sometimes lamb, and served with red-wine. Enjoy this Russian Dish...




Ingredients:
  • 2 c flour
  • 1 c milk or water
  • 1/2 tsp salt
  • 1 tbsp vegetable oil
  • 3 eggs
  • 1/2 lb beef
  • 1/2 lb pork
  • 1 onion
  • salt and pepper to taste

Method:

1. Grind beef and pork twice in meat chopper. Then add chopped onion, salt, and   
   pepper. To make mincemeat more tender and juicy, add a bit of milk. Reserve.

2. Mix flour with eggs and milk, salt and oil until a soft dough forms. Knead on
   floured surface until dough is elastic.

3. Take some dough and make a "sausage" (1 inch in diameter). Divide into pieces (1
   inch thick). Roll each piece so that each is 1/16 inch thick.

4. Take a glass or a cup (2 inches in diameter) and make rounds with it's help on the
   dough. Fill each round with 1 teaspoon of the mincemeat, fold into half-moons.

5. Pinch edges together and connect the opposite sides. Pelmeni can be frozen to be
   cooked later ( you can keep them in the freezer for a long time), or cooked
   immediately.

6. To cook pelmeni, boil a large amount of water, as they can stick to each other.
   Salt water. Carefully drop pelmeni into boiling water. Don't forget to stir them
   from time to time. Boil for 20 minutes.

5. Served with butter, sour cream or vinegar, and ketchup.
